Our Pastor kept telling us that he hated sheep meat of all sorts, and that
when he was growing up his mother had tried all kinds of tricks to hide the
sheep flavor, but that he could always tell and always hated it. One day we
took some chili made from the meat of a Jacob ram to a pot luck. After his
third or fourth helping we mentioned that it was made from sheep meat. He
was flabbergasted because he couldn't pick out a sheep flavor...

ALBC had a taste test for sheep. My butcher says he spends a great deal of
time cutting fat off the modern breeds of sheep. That is all wasted weight
and ruins the taste of the meat as well. I have had 5 yr.old intact Jacob
rams butchered and they taste just as good as the young Jacobs and are not
tough either.
