Thanks, everyone for your responses.  We'll probably keep it simple this
first time (burger and chops maybe) and see what happens.  This processor
offers a cased sausage that is supposedly excellent so we'll probably try
some of that as well.

And I'll definitely pass along the article on hanging.

As long as my children don't realize what they're eating, we'll be fine!
